Last night I wasn't in the mood for cooking anything complicated so I just mixed refried beans and salsa together and fried them in corn tortillas, easy and yummy :)
The day before yesterday I tried out a recipe for curried spit pea soup from my copy of Vegan With a Vengeance, which turned out amazing and I had plenty leftover for lunch.
